As you wish ~ This one is for you, Amy

Today's cooking with Cara Recipe is as follows:

~ Potato Soup ~

Get a big soup pot
Add some EVOO * extra virgin olive oil
Clean, peel, dice potatoes * 8 - 10
Dice 2 medium size onions
Add to pot
 Season with salt & pepper
Start to cook over low to medium-low heat
Stirring occasionally
Add 5 TBS butter ** yes, butter, this isn't exactly low cal soup
Stir occasionally to get butter all over the potatoes and onions
Slice, dice or chop **whichever you prefer half a package of bacon
Add to pan & cook over medium heat until crispy
When done, drain
Add bacon to pot & stir
Add 4 Cups milk & Stir
Reduce heat to low or a tad above
Bringing soup to a slow simmer
Cook for 45 - 60 minutes or until potatoes are tender

That's it !!!  Easy, easy lemon squeezy !!!

I served soup (neglected to get pics of finished soup ~ was to busy dishing up) with homemade bread ( again, no pics ) with this easy recipe that I got from another blog.  I tweaked a bit the 2nd time baking this bread and it turned out better then when I followed the recipe.  Sorry original poster.

Easy ~ Peezy Bread

1 medium size bowl
2 cups warm water
1 TBS yeast
1 TBS sugar
2 - 2 1/2 tsp salt **depends on your taste** recipe originally calls for 2 tsp salt**I found there was no salt taste ~ just flour**

Mix together in a bowl and let set for a few minutes

Add 4 cups flour ~ stir together

1 large bowl ~ sprayed with Pam  ~ Put dough in bowl ~ Cover ~ Let rise for 1 hour

Pre-heat oven 400 degrees

Spray Pam in ** I use a small black roasting pan, oval in shape**

Sprinkle bottom of pan with corn meal ~ Place risen dough ~ Shake pan to spread dough out ~

Let sit a few minutes while oven pre-heats

Place in oven for 25 - 35 minutes **depends on how crunchy you like the crust on the outside**

Don't worry ~ Bread will be nice and soft in the center ~ When done, remove from oven ~ Let sit ~ Flip out of pan ~ Slice, butter and enjoy with the soup !!!

Enjoy ~ I also have a ridiculously easy Lentil soup recipe too ~ If you like Lentil soup.
